Plan ahead on how to use your Thanksgiving day leftovers with these great tasty recipe. The best thing about most of these recipes you can use your own imagination. And you don’t just have to use Turkey you can use chicken or roast beef or venison.
4 cups cooked turkey, cubed small or shredded
3 -4 cups cooked vegetables (you can use carrots, corn, onions, green beans, peas est.)
1 -1 1/2 cup gravy or 1- can cream of chicken soup
3 -4 cups mashed potatoes
Heat vegetables, meat, and gravy on the stove until warmed than pour into a buttered
casserole dish. Mix mashed potatoes with egg and spread over the warmed filling.
Bake at 350°F for about 25-30 minutes until filling is bubbly.
Other Ideas –
Stir ranch dressing mix into the mashed potatoes
Stir 2 TBS sour cream into mashed potatoes.
Sprinkle cheese on top.
Mashed Potato Soup
2 tablespoons butter or 2 bacon drippings
1/2 cup chopped onion
1 cup chopped fresh mushrooms (opp.)
14-1/2 ounces chicken broth
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon paprika
2 cups prepared mashed potatoes
1/2 cup cheddar cheese
2 scallions, finely chopped
3 slices bacon, cooked and crumbled
2 tablespoons sour cream
2 tablespoons cream or 2 tablespoons half-and-half
Cook bacon, crumble and set aside. In a large saucepan, cook onion in butter or dripping until softened. Add chopped mushrooms to onions and cook until tender.
Add chicken broth, salt, pepper, and paprika and stir. Mix in mashed potatoes, stirring until lumps are gone. Bring to a boil, then lower heat and add cheddar cheese, stirring until melted. Mix in scallions, crumbled bacon, sour cream, and cream/half and half, stirring to heated, but not boiling.
LEFTOVER MASHED POTATO CAKES
1 cup mashed potatoes
1/3 cup flour
1 green onion (finely chopped)
1/2 teaspoon baking powder
1 teaspoon salt
1/4 teaspoon black pepper
1 -2 tablespoon milk
2 -3 tablespoons shortening or vegetable oil
Beat egg and with the mashed potatoes. Stir in the dry ingredients. Add the milk and mix well. (The batter should be very thick.) Heat the shortening or oil in a skillet. Spoon batter into the skillet to form 3″ to 3-1/2″ inch wide pancakes, about 1/2″ thick.
Brown on both sides, over medium heat. Can be served with ketchup or Maple Syrup.
TURKEY AND DRESSING SOUP
5-6 cups turkey broth or chicken broth
1-1/2 cups cooked turkey
1 cup leftover stuffing
carrot, peas, corn, green beans, est (cooked)
Place all above ingredients in stew pot and stir. Bring to boil and reduce heat. Turn off heat once all ingredients is heated thoroughly.
